SWEET GOLDEN OAT BARS

These crumbly oat bars will put a smile on your face. Not only are they HEALTHY, but they are SO easy to make. Their texture can't be beat - chewy and crunchy at the same darn time. A perfect breakfast on-the-go or mid-day snack. You can even crumble them into a bowl & pour over your favorite milk for a DIY cereal! They're vegan, gluten-free, oil free & refined sugar free.

INGREDIENTS
1/2 cup raw cashews
1/4 cup unsweetened coconut flakes
1/4 c maple syrup
1 tsp vanilla extract
1/4 tsp fine sea salt
1 cup gluten-free rolled oats
3 tbl unsweetened almond milk

DIRECTIONS
1. Preheat oven to 350°F
2. In a food processor, grind the raw cashews. Then add in the coconut flakes and grind them to combine with raw cashews
3. Add this mixture to a bowl and mix in maple syrup, sea salt, rolled oats and almond milk
4. Press oats down firmly into loaf pan lined with parchment paper
5. Bake for about 40 minutes, the top should be golden brown & edges crisped 😌
6. Let cool at least 1 hour before cutting

For some color - add in dried fruit, your favorite nuts or even rainbow sprinkles (I like soy-free, dye-free, plant-based brand Supernatural) !
