SUNNY ESPRESSO PICK-ME-UP

We still have some April showers ahead here in New York but fear not - this sunny espresso pick-me-up will keep you shining even when the skies open. It may be a coffee drink, but it has some deliciously crunchy texture thanks to the cacao nibs - and the natural sweetness of the date & banana do wonders for the nutty espresso. PSA: you can use cooled coffee as an alternative to espresso

Espresso drink

INGREDIENTS
1 date, pitted
2/3 cups of oat milk*
1 shot of espresso**
1 tbl of cacao nibs
1/2 of a ripe banana
Ground cinnamon
Ice, ice, ice

DIRECTIONS
1. Pull a (double) shot of espresso (or use 1/2 cup of cooled coffee)
2. Pour a little milk into the espresso shot to cool it off (we don't want the ice to shock the espresso)
3. Add espresso/milk, date, banana, 1/2 tbl of cacao nibs + rest of milk to blender and blend on high
4. Fill a glass with ice and pour blended mixture over it
5. Sprinkle the remainder of the cacao nibs on top along with cinnamon

*Feel free to swap out the oat milk for your milk of choice - coconut milk works REALLY well here :)
