SMALL-BATCH GRANOLA DUNKERS

GLUTEN-FREE & REFINED SUGAR FREE


Picture this: sun rising, air still, coffee slowly drips. The birds "chirp, chirp" outside your window as you exhale with a deep breath. . . and take one glorious bite of this crunchy granola. It is the PERFECT treat for pairing with/dunking in your morning or afternoon (make it decaf) coffee. These dunkers are gluten-free, naturally sweetened with raw honey and have that salty/sweet balance goin' on. They make a deliciously satisfying on-the-go snack for kids (and adults). And when you crave a full-batch, go ahead & double the recipe!

INGREDIENTS
1.5 cups of old-fashion gluten-free oats
1/2 cup of gluten-free steel cut oats
1/2 tsp of cinnamon
1/2 tsp of fine sea salt
1/4 cup of raw walnuts, pieces or chopped
3 tbl of olive oil
2 tbl of raw almond butter*
2 tsp of vanilla extract
1/4 cup of raw honey
Chocolate coins for top**

DIRECTIONS
1. Pre-heat oven to 300°F
2. Combine all of the ingredients except for the chocolate in a bowl and mix together, thoroughly
3. Pour mixture onto a baking sheet lined with parchment paper and press it down firmly, into one even layer
4. Cut a slit down the center of the granola to separate it into two large pieces (this helps the edges crisp more evenly)
5. Scatter chocolate coins on top
6. Bake for about 35 minutes, rotating the tray every 10 minutes or so
7. Once cool, break into pieces (to dunk) and enjoy with your favorite beverage!

*Room temperature almond butter works best here for combining
**I like to use Raaka's Maple Dark Baking Chocolate - they're refined-sugar free with only 3 ingredients - organic cacao nibs, organic maple sugar, organic cacao butter!
