HEALTHY PANCAKE DATE (dairy-free, gluten-free, refined sugar free)

Starting the weekend morning with a pancake date is one of the best ways to start your weekend. And while I love a good smashed banana oat pancake, I don’t always have bananas on hand that are ripe enough for the job. That's where this little breakfast star comes in - naturally sweetened by dates with a fluffy texture to boot, these healthy pancakes may just feel like the real deal.

INGREDIENTS
3 pitted dates
1/2 cup hot water
3/4 cup almond milk
2 eggs
1.5 tsp vanilla extract
1 cup oat flour
1/2 cup almond flour
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp fine sea salt

DIRECTIONS
1. Soak dates in hot water for about 10 minutes
2. Add dates, the soaking water, almond milk + eggs to a blender & blend on high speed
3. Combine oat flour, almond flour, baking powder, cinnamon + salt in a bowl
4. Pour in the wet mixture from the blender & add in vanilla extract, whisk it all together
5. Preheat pan over low heat with coconut oil or oil of choice
6. Turn heat up to medium and let that batter sizzle
7. Once you see bubbles starting to form, your pancake is ready to be flipped! Cook reverse side until golden brown. Enjoy 🥞
