MINI TUNA SANDWICHES

This is some versatile tuna. Sandwich it between a roll or scoop it on top of a green salad... it is mayo-free YET creamy from the avocado <3 A one-bowl dish you can whip up ahead of time and store it in the refrigerator. It's a wonderful on-the-go lunch that actually satisfies OR if you're looking for a quick weeknight meal... you've found it.

mayo-free, healthy tuna

INGREDIENTS
1 whole avocado
3 cans of yellow fin tuna, mostly drained
1 heaping tbl of Dijon mustard
Drizzle of olive oil
Juice from 1/2 of a lemon
Salt + pepper to taste
Some green onion
A little fresh dill

DIRECTIONS
1. Mash the avocado in a bowl
2. Mix in the tuna
3. Add in dijon mustard
4. Drizzle in some olive oil
5. Add the juice from 1/2 of a lemon
6. Add salt and pepper to taste
7. Sprinkle in some chopped green onion & fresh dill
8. Cover bowl and chill in fridge until ready to serve
9. Scoop onto nicely toasted roll - also goes great over a green salad!
