FIG MUFFINS (GLUTEN-FREE, DAIRY-FREE, REFINED SUGAR FREE)

I've spent a LONG time searching for a muffin that is gluten-free, dairy-free & refined sugar free - a muffin I can feel good about eating. And after much trial and error. . . I have FINALLY got it! These muffins take the cake (take the muffin??) First we've got the chopped figs that melt into the batter when baked, creating a chewy texture & unique sweetness. And then there is the orange zest & nutmeg, a classic match made in flavor heaven. We sift our flours here and use both baking soda & baking powder to ensure these gluten-free goodies avoid that {alternative flour} density-trap. Enjoy your fig muffin with the perfect cup of coffee, preferably in the sunshine!

healthy fig muffins
INGREDIENTS
Makes 8 muffins
1 cup almond flour
1 cup of oat flour 
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg 
1.5 teaspoons baking powder
1/2 tsp baking soda
1 teaspoon salt 1/3 cup maple syrup
2 tsp vanilla extract
1 egg, 1 egg white 
1/3 cup coconut oil, melted & cooled
3/4 cup unsweetened almond milk*
1 tsp Orange zest
2 tbl raw honey
7-8 dried figs

DIRECTIONS
1. Pre-heat oven to 325°F
2. Sift** the almond flour and oat flour together in a bowl
3. Mix in the baking powder, baking soda, cinnamon, nutmeg and salt
4. In a different bowl, combine the egg and egg white and lightly whisk together
5. Add in the maple syrup, vanilla, coconut oil, almond milk, honey and orange zest to the egg mixture and whisk
6. Fold the wet ingredients into the dry ingredients
7. Chop 3-4 dried figs into small pieces. Take another 4 figs and cut those right in half
8. Line your muffin tray with wrappers and fill each muffin wrapper evenly, about 2/3 full. Be sure to pour water into the 4 empty muffin holders to ensure they don't burn in the oven
9. Add 3-4 small fig pieces into each muffin. Using a butter knife or fork, gently press the small fig pieces into the muffin batter so they are fully covered
10. Then place half of a fig (seed side up) on top of each muffin
11. Bake for 22-25 minutes

*I like Califia's organic unsweetened almond milk - it's only 3 ingredients - almonds, water & salt!
**I use a small mesh strainer to sift the flours
